Did you ever see or eat this?
Yep. Tasted like a potato.
Yes, many times. Good for roasting especially.
delicious!
I’ve had a farm share for a number of years, and have eaten a number of different types of potatoes, including two different blue ones.
I grow them! Stokes Purple. They are the best because they are not as gluey as other types of sweet potato. They even grow in our hot summer weather.
ETA: it’s resource intensive but my favorite way to prepare them is freeze then bake, and I like them with olive oil, goat cheese, pepitas and salt & pepper.
That is amazing!
They have a kind of cool story too, were developed as a replacement crop for tobacco farmers in North Carolina. So easy to propagate. Just let one sprout then put it in a big container of dirt (easier to find them if you grow in a container) and if you get too many don’t sell them, I think they are still under patent.
We’ve been trying to grow them in order to eat them!
Yes many times. They re common over here, maybe not in supermarkets, bit can be found easily
Fantastic mashed with a bit of maple syrup. The end result looks like it was artificially colored.
Yes.
https://en.wikipedia.org/wiki/Sweet_potato in Europe and France at least.
Never seen them, but I’d try one of if I did.
The closest we have are mini potatoes that come in a tricolor bag including white, red, and blue. But the interior is mostly white
these are so good when roasted
Yeah, I have eaten Blue Congo potatoes, and they are kinda funny, they react with different foodstuffs, I seem to recall acids making the normally purple potato bright red where the acid touches it.
I’ve never even seen one in person. But maybe, if thats what the purple things in those veggie straw snacks are. I’ve had those. I didn’t like 'em, but I had them before.
Edit: Wait a minute, no. This past Thanksgiving my sister made mashed potatoes from purple potatos. How the hell forget that? 😵💫 IDK where she got 'em. Maybe Sprouts? We have one here but I never go there.
I was expecting them to be closer to a sweet potato but they tasted no different than regular potato.
@Hirohito i’ve never eaten one of those, but it sounds good. I love potatoes.
this one is a jam so it is sweet
@Hirohito nom. It’s amazing how many fruits and vegetables are actually very sweet. I’ve noticed that for me when I crave sweets, it’s the flavor, not the sugar that I’m actually craving, so I can usually satisfy that craving with a fruit or a vegetable.
Yes! Like an orange
