Turtle shells are different. A turtle shell is the animal’s spine. They can’t moult their shell. A crab’s shell is it exoskeleton, it sloughs it off when it grows. So the question of whether they grow new touch receptors for it each time is interesting imo.
Growing an entirely new nervous system each time that happened wouldn’t really serve a purpose and make an already dangerous process even more dangerous for the crab. So it’s relevant that they do not grow new touch receptors. They keep the old one. The old touch receptors have attached structures that grow into the new shell through a series of micropores.

So is your brain, but your brain does not have a touch receptors. Despite your brain being made of nerves you can’t feel your brain.

That’s an odd response and I don’t know what to do with it. So instead I shall tell you that people don’t need to be under general anasthesia for all brain surgery, you don’t even need anaesthesia for the brain itself (You do need to numb your way into the brain though), in fact it is common for people to be conscious during the process. During some forms of brain surgery patients are asked to identify shapes, play an instrument, or engage in other activities to know if the brain is being negatively affected by the surgery. If you suddenly can’t tell what a triangle is then the surgeon fucked up.
