Most of the time I leave the typos so that replies about them make sense. But today I decided to go for blood and make the correction.
Insides sound delicious but them tortillas could use a bit more of a grill IMO
Because of the size I couldn’t put them in a pan without replacing a broken burner and reseason my largest cast iron pan. So I opted to bake them on a pizza pan instead. Could they have been about 10% tastier? Yes. But at the same time I didn’t have to do any cleanup because I put parchment paper down between them and the pizza pan. Didn’t even need to flip them. Was it ideal? No. But neither is a broken burner.

When something has this much fat a little acid helps brighten it up and the sour cream wasn’t going to be enough for the four ounces of cheese in there.
