I find it a little concerning that in order to use a European payment system, it’s mandatory to use US spy-tech. Unfortunately, I haven’t found an email nor a form to contact the EPI to complain about this. Does anybody know how to get a hold of them?

The WERO app is optional, you can also pay through your own banks app. If that supports a degoogled phone, then you should be good either way.
You may write your MEPs and/or directly to Wero, GNU Taler, and others.
