To be fair, they were probably about the best carrots I have ever eaten.

I’m pretty drunk so I can’t remember the coating they put on them. Some kind of ground pistachio, oil, and something something else.

The dichotomy of vegetarian food… vegetables are the sorriest of food types, but the people who eat them exclusively come up with amazing accoutrements to make them palatable.

    I disagree that vegetables are the sorriest food type, and I’m neither vegan or vegetarian.

    The perception that veggies suck comes from people not knowing how to make them (which is how I grew up).

    My favorite vegetable dish is ratatouille. On its own it’s fantastic, paired with something like crispy oven-baked chicken with basil, parm and panko it really shines.

    Sweet chili glazed carrots are incredible.

    As are roasted asparagus with balsamic and olive oil.

    And potatoes… Well now, that’s a whole 'another thing!

    Dukkah maybe? Ground nuts, seeds and spices, great with bread and olive oil. Sounds like something you could put on a carrot dish that would be tasty.

    Well something i learned is that fat is the thing that convey flavor. Salt/sugar bring them to life. Pepper and spice add flavors.

    But if you want textures, vegetables are the way to go.

    Mostly vegetarian lifestyle is very very tasty as long as you remember to use a bit a oil, butter, cream, etc

    And from where i live, a lot cheaper as well ;)

    Humble but effective option:

    Add lots if lime, salt and powdered chilli.

    A dash of soy sauce and olive oil if you are feeling slightly fancier.

    Drunk anything tastes 100x+ better.

    As a mostly carnivore/hunter as I aged I did start to enjoy the vegetarian take on some foods.

    Tofu, I had no love for it until someone made me spicy (sriracha/Thia chillis) crispy tofu. ITS TO DIE FOR! Now its going to make your brown eye, well bruised but amazing.

    Also don’t buy from grocery stores, Asian\Latino markets are the place. The veggies last a week or 2 longer than Kroger.

    Now I need brussel sprouts and Sunomono…
