I know this will seem sacriligeous to most of you, but my mom had some blood tests and they are showing elevated glucose, pre-diabetes level of things. She already eats very healthily, nothing processed, no red meat, lots of salads and grains, only whole grain pasta/bread/rice… so it seems that the onlu option for how is to go on a low-carb diet.
She says that the hardest for her would be to stop eating bread. I am wondering if there is any way to make something that can be close to a loafy bread, but without flour. Is there such a thing?
Some sourdough may be ok for her. My brother’s doctor recommended that for his diabetes over non-flour keto options. It just has to be real sourdough, not the stuff that’s commonly sold in grocery stores.
Depends on what you define as “flour”…I bake my own gluten free bread, it’s made of equal parts buckwheat flour, cornstarch, wholegrain rice flour and a half part linseed flour + a ton of fiber husk. It does contain starch but for me this is balanced out by the other ingredients. I also like to make some " viking-bread" which ist mostly made of oats, seeds and nuts (no flour). Both are very tasty and do require some time for poofing/ chilling the dough whilst otherwise being fairly easy to make
Well, yeah, it exists. Not sure if calling it bread is honest since they don’t all meet the fundamental “leavened ground grain” paradigm, but that’s pedantic as hell.
This recipe https://www.wholesomeyum.com/recipes/low-carb-bread-recipe-almond-flour-bread-paleo-gluten-free/ is a fairly standard version. I find such options edible, and by that I mean that you eat the bread. They make shitty sandwiches though, and not much better for sopping up sauces and soups.
Just be aware that low carb really only means that they won’t spike blood sugar the way grain flour does. That’s a good thing, but don’t expect it to “fix” blood sugar staying higher on a regular basis.
Fat-head dough is a nice starter lower carb “bread”. Mozzarella melted then almond flour and other fillers are added.
Bakes good, makes decent waffles.
Look for Carbonaut bread if you’rein Canada. It has been a life saver for my grilled cheese cravings.
look up keto bread recipes. there are bean and nut flours to try. but im not sure they will deliver the same satisfaction of wheat bread. if she can have a little bread occasionally maybe it will be better to just cut back and ration it out rather than cutting herself off completely from something she enjoys.
