People shouldn’t die in police custody but at the same time maybe don’t get yourself in the situation which results in you needing to be restrained by two officers.

You won’t ever win, even if you have done nothing wrong just surrender and make your argument with a lawyer. Nothing you do from the moment the police decide to arrest you is going to make a difference to the outcome at that point.
