For the past two years I have been actively avoiding places which refuse to accept electronic pavement methods. It is just so much easier to manage finances (for me at least).
I’ve even been in the situation where the only cashless payment which was accepted was SUICA, so I charged my SUICA at the register on my iPhone via credit card!
Unfortunately, there are a few holdouts (looking at you local clinics etc).
What do you do when you encounter an establishment which only accepts cash?

I always ask beforehand. if they don’t accept digital it’s a I’m out.
Perhaps it’s just habit from the days of not having a credit/debit card, but I pretty much pay only using cash. I periodically go to the ATM and withdraw 5万 and that keeps me going for a while.
I use a credit card for online purchases though.
Most places are getting better about accepting cards but if I’m going out drinking then we’ve always paid with cash.
I just always carry bills on me. I’ve never felt unsafe or anything here, so it doesn’t bother me too much.
As much as I love using credit cards, I like to use cash sometimes if it’s a small business, because I know the CC companies tend to gouge them with fees. (At least, I assume they do, since it’s that way in my home country.)
That’s true there is a small percentage paid to the credit card companies, but I tend to assume that the price of the products take that into account so why not earn points?

Depends on the place. If it’s some small bakery or something, I will ask them if they accept credit cards or any cashless options, and if they say cash only, I will leave. I want management to see that offering multiple payment options matters.
I always have cash on me, of course and there are places I need to use it, such as the cash-only discount drug stores, local clinics, etc. But most of my daily stuff can all be done with a credit card, smartphone, cashless, etc. Restaurants are a toss-up if you’re not in big cities.
I don’t avoid them, but I always try to pay with Pasmo. It’s so quick and convenient.
