That’s durum wheat semolina bread with my sourdough, left to rise for about 24 hours and cooked in a Dutch oven
Nice! One of my go to loaves is sort of a pane tipo Altamura, in which I use home ground whole durum. I’m not crazy about whole wheat bread, but I love durum.
